Green Onions
Once an unknown entity outside of music circles in Memphis, Tennessee, the song ''Green Onions'' quickly changed all that for Booker T. & The MG's. By the time the album by the same name saw the light of day, everyone was asking at their favourite record store for Green Onions. Being an instrumental soul band, they were the house band of Stax Records in the sixties, playing on hundreds and hundreds of recordings by the likes of Otis Redding, Sam & Dave, Wilson Pickett and Bill Withers.
Their smash hit ''Green Onions'' was recorded 'accidentally' when they started jamming the tune during downtime of a recording session for Billy Lee Riley. Stax president Jim Stewart liked what he heard and unbeknown to the band started recording the impromptu session. And the rest, as they say, is history. Booker T. & The MG's are now considered by many to have defined (southern) Soul music.
